Strawberry Swamp

The final product

A Strawberry Swamp makes an excellent summertime dessert. They are moist, cool, and are a great way to use up a stack of fresh berries.

  1. Mix strawberries & 3 Tbls sugar in small bowl, set aside.

Crust

  1. In a new bowl crush the graham crackers & walnuts into a coarse powder.
  2. Mix in 1/4 tsp salt, melted butter, & 1 tsp blackberry brandy.
  3. Line a nine-inch pie pan with this mixture. Place it in the freezer to start cooling.

Filling

  1. In double boiler* melt one of the 1 Tbls butter.
  2. Stir in evaporated milk, 1 tsp brandy, a pinch of salt, 3 cups marshmallows.
  3. Simmer until marshmallows are fully disintegrated, stirring regularly.
  4. In a separate pan make a roux by melting 1 Tbls butter, 1 Tlbs cornstarch.
  5. Mix the roux into the double boiler.
  6. Pour the Filling evenly over the Crust.
  7. Scatter the Fruit evenly across the top of the Filling.
  8. Chill till solidified, approximately 1 hour in the freezer.
  9. Serve chilled but not frozen.

* You can fake a double boiler by placing a small pot in a larger pot, filling the larger pot ~1/2 full with water. Just ensure the small pot doesn't touch the bottom of the larger pot. Alternately, just use a single pot, but keep the temperature very low, and stir it more frequently to ensure it doesn't stick.
