A Strawberry Swamp makes an excellent summertime dessert. They are moist, cool, and are a great way to use up a stack of fresh berries.
Ingredients
Fruit
- 3 cups strawberries, chopped
- 3 Tbls sugar
Crust
- Half a sleeve of graham crackers, crushed
- 2 cups walnuts - crushed
- ¼ tsp salt
- ½ stick melted butter
- 1 tsp blackberry brandy
Filling
- 1 Tbls butter
- 1 Tbls butter (Yes, two separate tablespoons for the filling, they will be used at different times.)
- 1 can (12 oz) evaporated milk
- 1 tsp blackberry brandy
- A pinch of salt
- 3 cups marshmallows
- 1 Tbls cornstarch
Directions
Fruit
- Mix strawberries & 3 Tbls sugar in small bowl, set aside.
Crust
- In a new bowl crush the graham crackers & walnuts into a coarse powder.
- Mix in 1/4 tsp salt, melted butter, & 1 tsp blackberry brandy.
- Line a nine-inch pie pan with this mixture. Place it in the freezer to start cooling.
Filling
- In double boiler* melt one of the 1 Tbls butter.
- Stir in evaporated milk, 1 tsp brandy, a pinch of salt, 3 cups marshmallows.
- Simmer until marshmallows are fully disintegrated, stirring regularly.
- In a separate pan make a roux by melting 1 Tbls butter, 1 Tlbs cornstarch.
- Mix the roux into the double boiler.
- Pour the Filling evenly over the Crust.
- Scatter the Fruit evenly across the top of the Filling.
- Chill till solidified, approximately 1 hour in the freezer.
- Serve chilled but not frozen.
* You can fake a double boiler by placing a small pot in a larger pot, filling the larger pot ~1/2 full with water. Just ensure the small pot doesn't touch the bottom of the larger pot. Alternately, just use a single pot, but keep the temperature very low, and stir it more frequently to ensure it doesn't stick.
