Joke of the Week
There are only 10 kinds of people in the world: Those who know binary,
and those who don't.
Nearly an entire meal-in-a-pot, but it does benefit from being served with a
half pound of roast vegetables per person.
Ingredients:
- 1 pound Pasta (feeling fancy, use fettuccine.
Feeling the budget squeeze, use macaroni.
Anything will work, though fettuccine and rotini are my favorites)
- 1 pound Meat (Have beef, that'll do! Have chicken? Great! Italian sausage? Nice.
Whatever you've got on hand will work, though again, those are my preferences.)
- 1 medium-large Onion, sliced into ribbons.
- ½ head Garlic (or 1 toe/clove elephant garlic), minced
- 4 Tbl. (split) Olive Oil. Or better yet, the Grease from the meat
if you use meat that'll produce some tasty fats, such as ground beef, etc.
- Up to ½ Cup All Purpose Flour.
- 3 Cups Tomatoes (1 can)
- 2 Cups Soured Milk (or normal milk, but add 2 tsp White Vinegar
and let it sit while you prepare the rest of the food)
- 1 Cup Sour Cream
- ¼ Cup White Wine
- 1 tsp. Lime Juice
- ½ Cup Green Onions (1 clump), minced
- Spices:
- Salt
- Pepper
- 1 tsp. Garlic Powder
- 1 tsp. Onion Powder
- ⅛ tsp. MSG
- ¼ tsp. Crushed Red Pepper
- 1 tsp. Paprika
Instructions:
- Cook the Pasta according to package instructions. Retain 1 cup pasta water.
Drain and set aside.
- Sauté the Onion in a splash of Olive Oil until caramelized.
- Brown the Meat in a splash of Olive Oil.
- In a sauce pan, sauté the garlic until fragrant.
- Add the Grease from the grilled meat to the sauce pan to make a roux.
If there isn't at least a quarter cup, add Olive Oil to make up the
difference. Slowly add Flour until it forms a thick paste.
- In a blender, combine the Tomatoes, Milk, and Sour Cream.
Blend until almost smooth, but leave some texture.
- Combine the blended tomato mixture into the sauce pan with the roux.
- Simmer until thick (about 10 minutes).
- Stir in the White Wine and Lime Juice.
- Simmer until thick again (about 3-5 minutes).
- Add Everything to the pasta pot except the pasta water. Stir to combine.
Add Pasta Water as needed to produce sauciness.
- Season with Salt & Pepper to taste.
- Garnish with additional minced green onions, & Crushed Red Pepper. Serve.
