Pasta Alla Fina

The final product

Nearly an entire meal-in-a-pot, but it does benefit from being served with a half pound of roast vegetables per person.

Ingredients:

Instructions:

  1. Cook the Pasta according to package instructions. Retain 1 cup pasta water. Drain and set aside.
  2. Sauté the Onion in a splash of Olive Oil until caramelized.
  3. Brown the Meat in a splash of Olive Oil.
  4. In a sauce pan, sauté the garlic until fragrant.
  5. Add the Grease from the grilled meat to the sauce pan to make a roux. If there isn't at least a quarter cup, add Olive Oil to make up the difference. Slowly add Flour until it forms a thick paste.
  6. In a blender, combine the Tomatoes, Milk, and Sour Cream. Blend until almost smooth, but leave some texture.
  7. Combine the blended tomato mixture into the sauce pan with the roux.
  8. Simmer until thick (about 10 minutes).
  9. Stir in the White Wine and Lime Juice.
  10. Simmer until thick again (about 3-5 minutes).
  11. Add Everything to the pasta pot except the pasta water. Stir to combine. Add Pasta Water as needed to produce sauciness.
  12. Season with Salt & Pepper to taste.
  13. Garnish with additional minced green onions, & Crushed Red Pepper. Serve.
