There are only 10 kinds of people in the world: Those who know binary,
and those who don't.
Real pancakes should fill your up. Real pancakes are fluffy, but solid. Real
pancakes come packed with banana, whole wheat, chocolate chips, and oatmeal.
Dry Ingredients
- 1½ Cups All Purpose Flour
- ½ Cup Whole Wheat Flour
- 1 Cup Oats
- 1½ tsp. Salt
- 1 Tlb. Sugar
- 1 tsp. Cinnamon
- ⅛ tsp. Allspice
- 1 Tlb. Baking Soda
- 1½ tsp. Cream of Tartar
- 2 tsp. Apple Cider Vinegar
Wet Ingredients
- 2½ Cups Very Ripe Banana (~3 medium bananas)
- 2 Extra Large Eggs (or 3 medium)
- 1¾ Cup Slightly Soured Milk (or buttermilk, or plain milk)
- 2 tsp. Apple Cider Vinegar
- ⅓ Cup Canola Oil
- 2 tsp. Vanilla
Additional Ingredients
- ¼ Cup Semi-sweet Chocolate Chips (and or Butterscotch Chips)
Directions

If using plain milk, add the Apple Cider Vinegar to the
milk & set aside. If using buttermilk, you'll still use the
vinegar, just not yet.
- Turn on griddle to preheat @ 150°C (300°F)
- Combine dry ingredients in large bowl.
- Use a fork to pulverize the Banana.
- Whisk all wet ingredients (including milk) in small bowl.
- Pour wet ingredients into the dry bowl and mix.
- Use a solid dolip of additional Canola Oil or skillet.

Fill the griddle with as many pancakes as it will hold with ½ Cup of
batter per pancake. Make sure not to overcrowd the griddle.
- Toss roughly 5 Chocolate Chips into each pancake.

Cook until small bubbles form on the top surface, and then pop.
You will likely need to rotate them 180° to ensure even heating.

Flip only once. The second side will cook far, far faster than
the first, so don't get distracted. Cook until golden brown.

Serve with butter and syrup or butter and powdered sugar. Or
whatever floats your boat.
